Oftentimes viewed as a luxury food, quinoa is a lot more accessible than you think. A grain native to South America, that comes through our Free Market, quinoa is high in fiber and high in vitamins and minerals like iron, potassium, and magnesium!
Garden Veggies (Ex. celery, carrots, tomatoes, etc.)
Beans of your choice (I enjoy chickpeas!)
Vinegar (Balsamic if you have it!)
Seasoning to Taste
1. Cook quinoa according to package instructions
2. Dice vegetables and add to cooked quinoa
3. Add drained beans
4. Add olive oil, vinegar, and seasoning to taste
5. Chill and enjoy!
